Sweet Potato Chips

These are so easy and my family loves them!!! If we want to “stray”  a little from our diet we will add some blue cheese to these while hot.

I purchased a large fryer so I could make the chicken strips for the kids and these chips faster. It has been so much better to be able to cook more food at once.

I fill the fryer to the “fill line” with olive oil. As that heat I wash 3 medium sweet potatoes and slice them in thin circles with a mandolin.

I fry them for about 6 minutes with the oil at 380 degrees. As soon as they turn a darker orange and maybe start to have a few spots of brown on them I take the basket out of the oil and let it drain. I then place the chips on a plate stacked with paper towels and add sea salt. I will reserve some of these for Collin for school the next day.
