Breakfast Egg Muffins

I think this idea came from Scotty Hagnas or one of my online Paleo cookbooks…..so it was not originally mine. BUT, I couldn’t find the recipe so I just made this one up. This could be made hundreds of different ways.

First I cooked a pound of sausage we bought from a local farmer at the farmers market. It is a great idea to visit your local farmers market. If you live in the area the Roswell one is fantastic! They use organic practices and there are a few farmers that have grass fed beef and free range chickens.

I cracked 5 eggs into a bowl. I added two heaping tablespoons of grapeseed veganaise. I shredded some onion and some red apples. I also chopped up some asparagus tips. In about 4 of the muffin cups I put the egg mixture with sausage and shredded apples. In the rest of the muffin cups I put the egg mixture with shredded onion, sausage, asparagus and a little salt. I baked them in silicon muffin cups for about 16 minutes. They came out of the oven really fluffy then settled a little once they cooled. These were very easy and quick. This recipe made 12 of them.
