Coconut Flour Pancakes…..DELICIOUS!

My family loves these pancakes!

Recipe from Cooking with Coconut Flour book by Bruce Fife

2 Eggs

2 tablespoons coconut oil or butter

2 tablespoons coconut milk (sometimes I use almond)

1 tsp sugar (I never put this in)

1/8 tsp salt

2 tablespoons sifted coconut flour

1/8 tsp baking powder

Blend together eggs, oil,coconut milk, sugar and salt. Combine coconut flour and baking powder and mix into the batter. Heat 1 tablespoon of coconut oil in a skillet. Spoon batter onto hot skillet (medium heat) making pancakes about 2 1/2 inches to 3 inches in diameter. Batter will be think but will flatten out when cooking. Makes 6 to 8 pancakes.

I ALWAYS double this recipe as 6 pancakes do not go very far in this house and I add blueberries to half of the batter when I have them available.
