My Husband’s Lunch

This is one of my husband’s favorite lunches. As long as I have the supplies in the fridge, he will throw this together EVERY DAY. It is faster than going to a drive through!

We bake chicken breasts on Sunday to use throughout the week. We bake them in a stone baking dish with grape-seed oil, salt and pepper and they are useful for many things over then next few days.

I stock spinach, mixed baby greens, carrots, celery, cucumbers, tomatoes, olive oil, avocado, grape-seed oil, oregano, sea salt, pepper, nitrate free pepperoni and salami, broccoli, peppers garlic, ect and any or all of this makes a wonderful salad.

In this picture….one bag of baby spinach, chopped tomatoes, one small avocado, shredded carrots, nitrate free pepperoni and salami,baked chicken, some celery and a homemade dressing of grape-seed, balsamic vinegar and oregano. Yum!
