We really liked this for dinner.I made the crust from almond flour.
You will need:
3 c. almond flour
4 large or 5 medium egg whites(should equal about a cup)
9 tablespoons cashew butter
1/2 chicken breast already baked or pan fried cut into pieces
1 c. sauteed chopped onions (sauté in olive oil or ghee) use olive oil to grease baking sheet
1 to 2 cups paleo or natural sugar free BBQ sauce.
1 cup grated raw milk cheese ( I used cheddar b/c that is what I found at Natural Food Warehouse in the Raw Milk Cheese options)
First Pre heat oven to 275 degrees.Mix 3 cups almond flour, 4 to 5 large egg whites and 9 tablespoons of cashew butter ina bowl. Stir with a fork until mixed and smooth. Pour a little olive oil on a large baking sheet. Spread the “pizza dough” on the baking sheet. (I put olive oil on the bottom of a plastic 1 c measuring cup and use it to spread this sticky mixture. It takes some time). Spread it until it is a large rectagle about 1/4 of an inch thick and maybe a little thicker on the edges. Bake for 12 minutes.
Remove from oven and spread about a cup and a half to two cups of BBQ sauce on the pizza. I used “Bone Suckin Sauce” I bought at Natural Foods Warehouse. Add sautéed onions and baked chicken and grated raw milk cheese. Bake in the pre-heated oven for about 20 minutes more then change to BROIL and broil for a couple minutes.
