Yummy breakfast/brunch

 

Poached Egg Breakfast

 

One of my favorite things to order when we would go out to breakfast was a dish called Egg’s Christopher at our local breakfast place J. Christophers. I wanted to duplicate that this am so here is how.

 

I took two slices of the bread from the recipe below, added 2 pieces of pan fried turkey (I buy al natural, no hormone, no gluten,no antibiotic and nitrate free turkey slices from Applegate Farms), two slices of tomato, two slices of bacon and added two poached eggs on top. This ended up being more than I could eat and it was really good.Next time I want to add Hollandaise sauce and here is one recipe I found for a Paleo version.
